De-Boned the Chicken on Sat and marinated it.I leave the thigh and wing bone in,lets do pics

All the cavity bones removed ready to stuff on Sunday

Stuffing Mix

Ground Pork,Olives,Raisins,Chorizo,Hard Boiled Quail Eggs

Grated Cheese

All mixed using eggs as a binder

Sew the one end closed

[GALLERY=][/GALLERY]

Stuff

Sew it up and rest over night

Monday the day of the smoke had to tie it for shape

Took 5 hrs running around 300* in the WSM

Served with Dbbl Baked Potatoes, Asparagus, Stuffed Mushrooms

Isn't it cool how easy it is to just slice up a de-boned bird!

Yea I agree Richie.

When I debone one I just leave the drumsticks & wings on, so when you tie it up it still looks like a chicken.

I did a turducken a few years ago. That was a fun project.
