Cheryl Lee here (also from Richardson). Can you give me some guidelines (time/temp) for smoking turkey backs? I want to smoke several for future use in stock. Sure can't put a temp probe in these guys! Appreciate any feedback on this.
Fixin to be pastrami time. i got some going in the brine today. Hope to get it done before the 14th, if not it'll have to sit in the brine another 7 days. Should be ok don't you think? that would be 21 days.
Just wanted to thank you again for all your help our neighbors came by last night to hang out and they called again today to ask if I was gonna be heating up the pork haha they loved it so much... Thanks again
