Pork Schnitzel & Shiitake Linguini w/ Pine Nuts

So here is another Gordon Ramsey recipe (the dude just knows his stuff!!)

Started with some thin cut loin sandwiched with wrap.

A little mallet work to get them about 1/4 inch.

They got dusted with seasoned flour, egg washed, seasoned breadcrumbs, and then CI seared in grape seed oil.

Once seared they were towel dried then put in the pellet to keep warm till the pasta was perfect.

The pasta has shallot, garlic, white wine, tarragon, parm, flat leaf parsley, creme fresh, and pasta water and brown chicken stock.

The plate: topped with roasted pin nuts, Romano and chopped parsley.

Looks awesome! I love pine nuts! We always have some...need to use them more often I guess. Salad looks great! I would tear that up no doubt!
 
Looks really good. We like Toasted Pine Nuts as well. Just a note...If you buy in bulk, Bag, Tag and Freeze typical portions. Their high fat content makes them go Rancid faster than other nuts...JJ

Alright, this one did it. I've seen a couple of schnitzel threads recently and thought I needed to make some. now I absolutely MUST make it. This looks absolutely stunning. Excellent job and a picture perfect meal.
