Hey all Merry Christmas and/or Happy Hanukkah and/or Happy (fill in your celebratory day including Festivus).
As we do every year, we hosted Christmas Eve dinner. The menu was chicken cordon bleu, roasted potatoes, honey glazed carrots, and a cherry bourbon glazed ham. Everything was great but the game was out of this world.
I followed (sorta kinda) the recipe from Armadillo BBQ-https://youtu.be/R4M-utN52l4
The ham was smoked on the PBC on the rack with pecan for about 3 hours at 280F. I glazed it with the cherry bourbon glaze in the video at an IT of 130 and let it come to 140 IT. Pulled and foiled til dinner. The result was nothing short of amazing. One of my best all around smokes to date. Highly recommend something’ like this!! Pics below:
