So a several weeks ago I smoke a prime packer from Costco. Sliced up the flat, but chopped the point and froze it.

Spent the weekend at a friend's lakehouse, but came home today and decided I wanted some BBQ. Defrosted the point, loaded in a pan with my own BBQ sauce, three hours or so on the MES 40 with apple wood. Results:

Tender, juicy, smokey. Couldn't ask for better burnt ends.

Ahh the world of Prime brisket!
It is a treat for sure!
Your burnt ends look delicious!
