My first effort last weekend with a new MES was disappointing.  Cooked too hot and chuckie and baby backs were too overcooked.  No leftovers by Sunday, so not miserable, but not great.  My probe thermometer came in this week and helped the second effort be a success.  Did a Boston Butt and some bone in chicken...came out GREAT.... big smoke flavor, moist, tender...OUTSTANDING.  Thanks for all the hints and help on this forum.  Had a dinner date so it'll have to wait for tomorrow to really dig in.

Very nice. You are catching on quickly.

Now that the smoke bug has bitten, you are infected for life.

You will never stop, and always be looking for new things to smoke. lol
