This weekend I decided it was time to try my hand at pulled beef.
Here I want to give a shout out to @chopsaw and his post Pulled chuck method , and to @jcam222 and his post Smokefire does Chuckies and Keto Cowboy Beans.

I was getting hungry for wings again, so on Wednesday my wife defrosted some party wings and Thursday afternoon she put them in a 9x13 glass cake pan with a butter brine, covered them, and put them in the refrigerator.
This is the butter brine
1 cup of vinegar
1/2 cup of melted butter
2 1/2 tablespoons of Worcestershire sauce
1 cup of water
3 tablespoons of salt
1/4 teaspoon garlic salt

This recipe is for 2.2lb of meat
pork, containing approximately 80% meat and 20% fat;
Kosher salt 18g plus cure#1 2.5g
3g pepper black;
5g of garlic powder;
50ml of red wine;

Chop the meat and fat into half an inch cubes. Trust me, if you grind it it won't be the same chewy bite. Mix all ingredients until mixture is sticky. Stuff into casing and let it dry 3 weeks.
