smoked pork neck for beans or peas

I found some non-smoked ones a few months ago, roasted them in the oven and put them in a pot of split peas to simmer, pulled the meat off them and returned to the pea soup and it was the best pork I ever ate, seriously, the taste and tenderness were off the pork scale.
 
I've never bought smoked neckbones, but they look like they would be great in bean and soup recipes. Every year around Christmas and/or Thanksgiving, someone will have smoked hams on sale for less than $1.00/lb. I'll buy a shank portion or 2 and cut all the meat off of the bone. I'll cut the meat up into cubes, vacuum seal in about 1 lb. packs, and freeze to use for seasoning meat in recipes throughout the year. The bone gets frozen separately to be used for the same purpose. This is much cheaper than any other smoked seasoning meat that is sold in stores.

Also I usually smoke a couple of turkeys during that time, as well. We're not turkey leg fans so those end up in the freezer to be used for seasoning meat, too. I'll go ahead and make stock out of the turkey carcass and wing tips which also goes in the freezer.
 
ok i have only used these once. but gramma, i ate her soups n baked beans n pea soup n others.
well i got couple packs for wifes pea soup n baked beans and bean soup. course got a half ham bone in also.. winters coming.. any body else use e'm??? Villari Brothers Smoked Pork Neckbones, 2.0-2.5 lb - .. course make stock first
luckily that's one of the few things Mama can get at the meat shop regularly down here. She gets 4-5lbs and i flash smoke them in the electric and vacu-seal for collard greens and beans.

My Dad says the same. Not so easy to find here. Hocks are easy to find and cheap and what we normally use. That said, I do not care for the meat just what it adds. If I ever score any neck of hocks cheap (fresh hocks are 2-3x smoked) I plan to cure and smoke a long time. I think curing would take a neck to another level.

Not only yeah, but heck yeah! I use them for soups, stock (to freeze or pressure can) and about any kind of Mexican food. And they are the basis for my smoked pork butt injection. First I cold smoke a family pack. Then add them to my pressure cooker with some Minor's pork base.

For my injection I strain the broth, and adjust strength with additional Minor's base. Then I use 60% smoked pork stock and 40% Coca-Cola injecting around 1 ounce per pound. The flavor needs to be slightly salty to the taste since the butts smoke for 8+ hours, and I use a finishing rub on the meat as I break the butts down.

How much are you paying for your Minor's pork base?
This store I use to buy it from the cost was crazy low. I used to get a jug for $8.00 for pretty much any of their bases. That store is gone now and I don't want to pay $15 on Amazon, yeah I'm cheap. LOL
 
It's bard to find them out here. If I drive to Richmond or Oakland too the old black owned corner stores that have butcher shops I can get them but that's taking your life into your hands. I don't go there often they days and if I do I take my gal Kimber with me, 45ACP makes me feel all warm and fuzzy.

I live right up on the banks of the delta, east bay.
I used to work in SF so driving home I would stop at the small mom and pop butcher shops in the East Bay ghettos. But that was a while ago before I retired, it's a war zone over there these days, I won't go alone anymore a guy beeds back up over there now. No joke!!!
 
at our local sams you have to ask for necks, just never knew they had them, like so many of there meats like dino ribs n whole chuck rolls n pork sides ect..

I buy the paste form. in this size of tub. And I buy Au Jus in the liquid form to use as a binder for rub and to make a small amount for dipping.

We do a group buy to save on shipping, but COVID must have impacted their business because every couple of months they will have a special on shipping. Sometimes it's a flat fee of $4. I'd register and get on the email list. I recall they only ship the bases on Monday. Here is a link to the main stock/base page, but search the site for "Minor's" because some products hide on other pages.

My wife could got these bases when she worked in the school kitchen. The low sodium chicken base is killer stuff but without any hesitation the demi glace was easily the best of all. I can get some but not all of these at GFS here.
