Today I am trying a couple of appetizers/small plates out on my new MES 130b. This is the first time I have attempted either of these and it's the first time on the new smoker so we will hope all goes well.
The scotch eggs are simply hard-boiled eggs wrapped in sweet italian sausage. Next time I do these I would to try more of a breakfast style sausage though. I used 2 lbs. of ground sausage with 11 hard boiled eggs.
The Armadillo Eggs are jalapeno poppers wrapped in a hot italian sausage. I used 2oz. Of cream cheese and about 1 cup of mixed shredded cheddar for the filling. I also used 1 lb of ground sausge
This made 5 eggs. I chopped both ends off of the jalapenos and cored out the seeds and middles.
Both are getting smoked at 250° with Cowboy Brand pecan chips and will be taken out when the sausage wrapping reaches 160°. Hopefully they will only take 1.5 to 2 hours. I will attach pictures here of the pre-cooked food and reply with more pictures when they are done and ready to be served.
