First attempt at both of these.

Cooked using the 3-2-1 method at 240

Came out real nice , bones just pulled out clean

Cooked like this for 3 hours, then transferred to foil pan.
Covered with honey and BBQ sauce and cooked for another 2 hours

These were lovely, I can see why they are so popular now
Big thanks to this forum for all the tips given, makes it much easier for a novice like myself to cook really good smoked food.
