Howdy smokers. Beautiful fall day here in Tennessee so decided to smoke up a chuck roast

Used some kinders AP. Pretty tasty

Onto the smoker at 225 with pecan pellets

Smoked for around 3hrs until IT was 160 then put in pan with a splash of beef broth, Guinness stout and covered with foil. Into the oven after that at 250 for 4hr

Wrapped in foil and held in cooler with a towel for a couple hours until supper. Defatted the drippings

Tender as hell. Made Sammiches. Beef, pickles, slaw and hot bbq sauce.

Looks good. I have never smoked a beef roast. I need to fix that.

Yes sir that looks great Jake. Never done one but maybe this weekend especially since they're on sale here. What size was the roast?

That looks amazing! Ive never smoked a beef roast either and I was just thinking of making some Guinness stew. I think the leftover roast would be perfect. Thank you for sharing!

Looks awesome Jake I enjoy smoking the chuck roasts for pulled beef since they are smaller and go so much faster than a brisket. They are a better size when it's just the wife and I as well.

I have a Chucky in the SV tank, it's been in there since Sunday morning. I was going to have it yesterday, but things came up, so we'll have it tonight, pot roast style.
