Well with all of the talk about how easy butts are and after learning a lot recently from Gary, Bear, and Chef JJ, I decided to give it a go.

Getting the butt ready. After reading Gary's Butt 101 thread I gained confidence to not stress so much over my temps, to let it burn at a level that it wants to.

Butt's been on for about an hour.

While the butt's on it's time to whip up some of Chef JJ's famous finishing sauce. That stuff is all that! Also made some of Gary's beans but I was killing it so I forgot to take pics.

It decided to dump on us for about 45 minutes. My temps plummeted but we powered through.

I forgot to take pics from this point on but got a good one of the final product. Total cook time was 7 hours for a 7lb butt. You'll see Gary's beans, my beautiful butt, some poppers, and in the back you'll see a bottle of Chef's finishing sauce on the left and two bottles of Gary's world famous BBQ Sauce on the right.

I hope that you all enjoyed my presentation. Again many thanks to Gary, Chef JJ, and Bear for sharing their knowledge and experience with all of us.
