Salmon Jerky!!

Hey all… we love salmon in different ways… one is jerky! Some have not heard of it…

Started with this…

Next step is slicing up for the jerky…

Then into the brine… overnight!

There are several variations of this… I like the 2 cups light brown sugar and 1/2 cup of kosher salt… with a few cracks of CBP.

After the brine… rinse with cold water… the pieces will be more “hardened”… that is normal… that means your salmon is cured!

Next is laying it out to form the pellicle… Take your pieces, pat dry and let sit on the counter for an hour ish!

After the pellicle… season to your liking…
This go around I done 3 types…

First was some hot honey courtesy of @jcam222 . Brushed on the hot honey and added some CBP…. Jeff, that hot honey is awesome… Thank you!

Second was some Cherry Habanero seasoning… it’s some good stuff and think it will complement the salmon nicely…

And last… some for the wife that’s not a fan of spicy… Meat Church Honey Hog… can’t go wrong there!

In the dehydrator cause the weather didn’t cooperate today…

Oh man, the many things to use that sauce with......But you only got a limited supply. Now if we could get Jeff to do it up in half gallon bottles......
