Fassets Fatty cannon patties!

We're out of breakfast sausage so I decided let's make some patties.

Normally I would hand form these, but I haven't used my fatty cannon (piston, press, stomper) in a while so thought what the heck!

The patties will be a bit smaller in diameter but maybe that will make the wife happier!

I was out of Fassetts seasoning so I had to make a batch. Any 12oz or larger container works for this.

3/4 cup salt (167 grams)
1/2 cup black pepper (60 grams)
1/2 cup sage (28 grams)

1 tablespoon per pound of meat.

I will also add to the grind, garlic and red pepper flakes. I do not mix this into the base mix as I like to change it up as needed.

Okay the fatty cannon.

Used for making the fillings for fatty's and in this particular case sausage patties. I will grind and mix the meat. They press into the tubes. Freeze for a while, then press out and slice into patties.

I'm sure my wife will be thrilled!

Cannon consists of 2" pvc (a bit small for patties) and then all these parts!

How much red pepper do you put it or do you just eye it??

I added 5'teaspoons garlic and 3 teaspoons of the pepper flakes. I didn't want it to be to hot for the kiddos .

8.42 pound bone in, ended up with 7 pounds ground after trimming and removing the bone.

Added 7 tablespoons Fassetts, 5 teaspoons garlic and 3 teaspoons red pepper flakes.

Shot some out onto the parchment. Filled three tubes. Into the freezer for a bit. I will pull all out and slice. Then vac pack and freeze.

I'm going to make a few of these as well! Love the idea for filling a fatty. I always fight with them.

Have you checked to see if the larger PVC diameters would work the same way. I may have to hit HD when I get home and see.

I'm sure they would CB. Most end caps and such will
Fit inside the pipe a few sizes down.

Getting ready to remove from the freezer and slice some patties!
 
Okay here we go. I'm not sure that the effort is worth the end product on this one.

When you use the cannon for a fatty you shoot out the stuff and wrap with sausage and then the bacon weave.

Even though this set, it wasn't enough to slice well. Anymore time in the freezer and the meat wouldn't come out of the tube.

The ones I formed and pushed out fresh were okay, but sagged in the freezer so not perfectly round.

Cookie cutter method probably still the best.

Fun experiment and ended up with 60+ breakfast hockey pucks.

I'll let these firm up in the walk in freezer (aka garage) tonight. Vac pac tomorrow.

Does look good from here. Hmm, push log out, continue freezing, buy bandsaw, slice up! Perfect patties!

Yeah, it sounds good on the internet, I couldn't swing that one!

Still a bucket full of great sausage patties!
