I had a "PNS/ Physician Nutrition Specialist" explain it to me like this, you can't eat enough bread for it to alter your A1C, it's either a combination of many things you're eating or it's hereditary, plain and simple.

I eat bread damn near as often as I'd like now, but try to watch my every day meal preparations.

Talk with a PNS, not a cardiologist or gen practitioner, they don't spend anywhere near enough time in school learning about nutrition to be preaching it like the gospil, like most do, it was life changing for my family.

IDK maybe for a non diabetic, when you are one it is all about the carbs for the numbers.

Give it a go . Flavors can be whatever you like . I've done roast pork , ham and Swiss .
Boars head is good . I just used some lunch meat I get a GFS . St. Louis has some great Italian markets and Volpi foods is located here . All kinds of goodies .

It's a nice change up and pretty easy . I always have dough in the fridge , but store bought works , and keeps it simple .

Had a 5 day ferment on some pizza dough , but just had pizza . Decided it was time for another Meat Strudel , calzone , stromboli sandwich . Take your pic .
I've made these before , but it's been awhile so I figured I'd post it .
Late start on the pics , but the idea is to roll out the pizza dough and using one long side , layer in the fillings .

Pizza dough recipe :
265 grams KA 00 flour
170 grams water
1/2 tsp sugar
1 1/4 tsp salt
1/4 tsp yeast .
Hold at room temp 12 hours , or go to the fridge .

That looks really good, nice 5 day fermented dough solid layering of meats and cheeses and the two stage bake was done right Cooling before slicing is the key move to keep the cheese inside and not lose structure
