My kids love burritos so when prepping our prime rib for this year, I saved all the trimmings from squaring it up and took two 1/2" slices off of it for burrito usage.

Marinated the meat in my homemade chimichurri for 24 hours, grilled them up on the Weber Mini Q, and diced. Rolled up in an extra large flour tortilla with guacamole, seasoned fries, shredded cheese, homemade pico, crema, and some creamy salsa verde.

These are going to be a weekly staple in our menu, methinks.

Eggs aren't in the future plans for this (my youngest hates them), but I am considering making them into eggrolls next time...be like mini chimichangas. 🤤

I have Masterbuilt’s Electric Turkey Fryer but tend to usually deep fry in an enamel coated cast iron dutch oven...just seems easier. In fact, frying up some chicken later tonight for dinner.

Good to know, I have an enameled dutch. What kind of oil do you fry in?
 
From Cal. It gets a pass. I make burritos more than anything. So versatile.
 
That looks Killer Bruth'a, I live in little Mexico north, and never heard of fries in a burrito, until I googled it. Apparently it's a SoCal surfer thing which explains why I've never heard of it, seeing that the only thing I despise more that NorCal, is SoCal. :emoji_confounded: :emoji_laughing: :emoji_laughing:

Never heard of it either until about 3 or so years ago when we ventured out to crazy-world to see my sister in San Diego. We stopped at a burrito cart and this was their top seller. Thought fries on a burrito was odd, but figured I'd give it a try....surprisingly it works. It works really well. Now when making burritos at home, they always get fries on em.
