Near New Orleans La
Friend of mine’s niece attends high school in Pineville, La. and is a power lifter. This weekend he and I catered a two day event for the boys and girls teams. It was so much work but we had a good time. Headed home now. I took a few pics along the way and thought I’d share. I love my Fatboy. I’ve been cooking on it for two years but this is the first big off site event we’ve done.

We cooked 18 butts and pulled pork sammies. We also made two huge batches of jambalaya from scratch (my cooking partners recipe), several hundred burgers and about 90 leg quarters.

couldnt be happier w my Lang Fatboy.
 
Great work and all the wood looks great!! I’m sure the kids and parents loved it. Your rig is a beauty too!

WOW! Great use of the fat boy, you really put it through it's paces. Definitely looks like lots of work, but I bet worth it.
Awesome job man.
Interesting to note, you can see by the shoulders which direction the heat is coming. The ones on the left have much more defined bark than the ones on the right. Just a cool thing to see.

Lol thanks zwiller. I know I know, sweet baby Ray’s is not my first choice but those leg quarters were for the judges. We didn’t even buy em I was just asked to cook them lol (although you know I jazzed it up!)

Thanks and yea you are right but we had a good little system going w the shredding. We just did a few at a time and made big pans of sammies (meant to take a pic but we were getting steamrolled) and set them in the warmer box. That warmer box was perfect for that. As we got to the last couple pans, we’d pull a butt or two and start shredding again.

Thanks TB! Good catch with the color, you’re right. So, all I do is wrap based on color. So, naturally those that get a little darker get wrapped first and usually by the time those are wrapped the others are ready.
