Had my wife pick the biggest fattest loin she could find at Costco, she brought home a 10lb'er.
I got home, halved it and trimmed it up ready for the weekend.
I've two cooks planned for this loin, so grab your favorite cold beverage and hang around.

After trimming I'd a pile of perfectly good pork that needed sampling.
So I heated up my 12" cast iron frying pan, gave'em a quick dusting of flour seasoned with my pork rub and fried'em up... Yummy, spicy, juicy pork goodness.

I also picked up a bag of eight nice Cubanelle chiles, would've chosen Pablanos if they'd been any good, 2lbs of bacon, large tomatoes, queso fresco, cilantro and more.
Now what can I do with these, hmmmm? ;)
 
I'm in! You can't beat yummy, spicy, juicy, pork goodness! :D Can't wait for those loin and pepper results! :)

Yep, that pile of trimmed rib meat fries up real nice, makes an awesome crispy snack.
Or shish kebab, satay, red/green chile, puerco carne guisada and more.

Time for me to get busy with prepping for lunch.
