Swayed by yet another enabler :emoji_wink:, I had to try Okiejoebronco25's Cuban sandwich. I love these things, but have never gotten around to trying them myself; they are hard to come by in my area.
So off to Winco to get some pork loin and used his marinade recipe, even down to the chopped jalapeno. Then a Cuban rub recipe from the interweb
Only took about 90 or so minutes to get these 2 pieces done to 140* on the Backyard Beast.

What did you use for bread? I'm sure you find Cuban bread at every grocery store, NOT.
The only place I could find a good Cuban when I lived in greater Seattle area was surprise at the Boeing cafeteria at the Everett plant. Those were killer.

LOL, that's how we make them in our family as well.
Watching America's Test Kitchen tonight and they reviewed cast iron skillets. A press was one use.
If you want to get fancy with grill marks, a pair of hot cast iron griddles works, too. I only have 1 cast iron griddle so only 1 side gets the marks.
