Okay got Tri tip on the menu again.:yahoo: currently smoking in the WSM with a chunk of cherry I just got in from Fruita woods & BBQ Supply, we'll see how this wood compares to the dried out box store bags. Seasoned with SPG and worchestshire sauce and will be served with mushrooms and onions, baked potatoes and maybe a vegetable if the wife's up to it.

Tri-tip is my favorite meat to smoke. Fajitas, sliced like a roast, sandwiches. pretty much just depends what you feel like.  I've been reverse searing my steaks and thick chops, but haven't tried it with a tri-tip yet. Say you pulled from the smoke at 108T and the grill at 128, but what temp was the grill at for the reverse sear and about how long did you sear each side?

Thanks,it was tasty! Luckily my garage is full of toys not cars and I run the smoker in the corner by the door it's protected from rain and wind for the most part and I have a raincoat to get out there.

Grill was about 600*F then 45 sec flip 45 sec flip 45 sec flip 45 sec flip decked temp let it sit in the grill on top rack with the grill off for a few till temp was where I wanted. Another member seared one on a cast iron griddle which seared the meat very well. Here's a pic of the sando I made last night as you can see I. Really liking these Tritips as well.
