Followed the recipe posted recently by Jeff to smoke a tri-tip. I'd been doing something similar just not wrapping it.

Rubbed the trip tip with combo I use for brisket.

Put it in smoker at 250F for 3 hours.
Note to self: when planning the cook, remember to add in smoker warm up time. Din-din was 1/2 hour later than should have been.
Just short of 3 hrs, it got to 160F. I left it run until 3hrs.
Wrapped in foil and put back in for 2 hrs at 275F
Very tender and still juicy.
EDIT:
Made potato salad this morning used potatoes I smoked yesterday.

That looks delicious!
I have never done a TT that way before. We like ours med/rare, but I have noticed a lot of guys are taking them to higher IT’s. I guess I will have to try one that way too. Nicely done!!
