Stick with the Sake on the wings and as for the 7 spice I think it was the orange on the mix that threw it off for me.. which is also why I think it will go better with the pork shoulder
 
I tried your wings in the air fryer last night, Charlie. First time I've used it. Thanks to you, I now have a new obsession.
I happened to have a bottle of sake lying around; someone gave it to me as a gift, and I didn't know what to do with it. Also had some ichimi togarashi leftover from a previous recipe. This one has a little ground chile in it, just enough to give it a little kick. And they turned out fantastic! I actually tried a using control group under the broiler, and they were nowhere near as good as the air fryer. So thanks again!
