Loaded up the Bayou Classic this morning with plenty of meat. Thank goodness for the Vacum Sealer. Spare Ribs, Skinless yard bird, Pork sausage and Cowboy beans. Used my favorite wood. Pecan. Very windy and cold today. Had to work at it. We have all been there. Turned out good though.

Funny, how you get used to the norms of where you live. Today was about 30, but felt quite warm in a light winter jacket. From what the weatherman says, we're in for below zero temps real soon. Nobody here enjoys that either. What I can't take, is temps above 80 with high humidity.

Your right, I guess we all get climatized. I'm happy as a pig in mud being 80* with the high humidity. The high 90's though get a little rough. There is now way I could say it's 30 but felt quite warm LOL.

Those beans look awesome and I bet they taste even better than they look. I loves me some beans.
