Full loin from Costco. I decided to cut it in half since not many folks are eating. Everyone is busy lol. Stuffed with spinach and cheddar cheese. Meatloaf went in the peppers, I wish I put rice in but didn’t.its been going to hours at 225. Loin is at 117

No just couldn’t get pics to load earlier. I wanna make couple sandwiches out of the loin tomorrow.

Thanks gmc!got a water pan I’m building for her now. I cut the piece of stainless out then had a fab shop bend it up for, cost me 75$ just for the bending but it will last a couple life times. It’s 1/8 inch and I just need to weld some adjustable feet on and make another diffuser plate under this pan. I’m worried it will warp so I’m Gina fab up a mild steel diffuser under it. I was thinking about have couple tubes come up through the pan but dicided not to now maybe later. Holds 5.6 gallons max

Here’s kinda crappy dark pic. My lights went out lol. I drilled these feet out today and welded 1 nut on. Need to get 3 more tomorrow. I’m going to cut off the corners and make those pieces round. It was hard to see welding the corner part lol.

Hopefully I’ll be able to test it out this week. Got 2 racks of salmon creek farm ribs and I’m sure I’ll do some peppers again because there good!ive been looking for the chicken and rib rub from Weber and the stores can’t seem to keep them on the shelf. I remember that stuff is good
