Lazy meal…..

After working six days and the week I‘ve had I wanted an easy meal. Did a little googling and decided on Mexican stuffed bell pepper.

Red bell peppers, a pound of ground beef, a pound of chorizo, rotel tomatoes, whole kernel corn, mex cheese, spanish rice, and taco mix. Browned up the chorizo and ground beef with diced onions. Sliced the bells in half length wise. Mixed everything with about half the cheese and stuffed the peppers.

covered with foil and into the oven at 350 degrees for 30 min. After that pulled the foil off. Covered with the rest of the cheese. And back in for 15 minutes more To melt the cheese.

and the plated shot with some chips and white queso dip. Using the good china.

It was good And filling. Could have used more cheese in the filling. But it was edible…so a win.

You being tired and all , I think I could have whupped ya and taken it all. Haha. Nice cook buddy. Real good work. Keep your knives sharp.

That is a great meal and I love some stuffed peppers. And I'm with you on always more cheese , ha ha :emoji_yum::emoji_yum:
