Wife took a half pork shoulder out of the freezer last night. Plan was to smoke it today for pulled pork, but had to work at one of the rentals so that didn't happen. Decided to cut it into CSRs instead. Also had a half pork loin I got to cut Chops out of.
Finally made up a batch of Jeff's rub and got them all generously coated.
Let those hang out while I got the kettle going with the vortex. Burning some hickory and pecan. Hickory is from a bag, pecan is from the back yard.
I'll check back in when the Chops come off. Pulling those at 145*F. Mixed up some sweet baby rays, Jeff's rub and acv to baste the CSR's with.
