So I want to try these things <I'm doing my 4th cook out on Friday.> but I am a tad confused on the methodology here.

I understand making them, but is this done in the smoker or on a grill for the best results? I don't want some thing where the outside has charred and the inside is raw or any thing weird.

Also throw some ideas at me for fillings..right now I was thinking of these glazed and sauteed onions and mushrooms I do for steak.

Oh..and when you wrap the bacon, what holds it in place?

Thanks every one! I got a buddy coming over and I want to get it right since he's helped me out alot keeping my PC running etc this last year. Namely when ever I have a problem, he's the guy I call lol.
 
Well the best I can do in my smoker is 275f. I was considering if needed I'd use a blow torch to crisp though..

Beer can burgers scream for hot coals to get that beloved burger char. I make them bacon wrapped with a Gorgonzola mac cheese with chopped morel mushroom filling topped with a crispy onion ring filled with crispy pancetta. I bank the coals around the sides of my Weber Kettle and cook them indirect until they are done then slide them over the coals to char them up. Everyone that has had them go nuts for them, I make them for the kids with american cheese and don't bother with the mushrooms or pancetta I use regular old bacon. I almost forgot, I microwave the bacon for two minutes before I grill these so the bacon crisps up a little better. I'm gonna have to make these again soon, I haven't made them yet this summer yet.:emoji_yum:
 
Alright.

I plan to do the smoker method and finish them on my grill. <The way the weather is..well if it rains it'll be a problem to be running a grill and keeping it going when trying to entertain guests. Smoker being electric I can cheat!>
 
Well every one liked them..some bonus shots of the garden!

Mushroom swiss was preferred to the stuffing with cranberry. <Though I always like that combo!>

They are good. A alittle corned beef hash in the bottom of the sausage cup with some cheese topped off with an egg. Yummm Yummmm good. May have to make some this week.
