Pulled Pork Beer Pancakes w/ Apple Pie Jam

I made this concoction for dinner today...Boiled a bag of frozen leftover PP from my last butt smoke, put in between two beer pancakes and topped with 100% pure maple syrup, served with Ms. Duke's home canned apple pie jam.

It was good stuff!!

Well that is creative to say the least! How about with cornmeal pancakes with a touch of jalapeño and smoked cheddar!
