I think the cure 2 sausage/salumi recipes intimidate allot of folks, dont let it as it's not that hard to do. You just need some basic knowledge on the process an much patience.
The short shots are really close to dried salami sticks and S, African Droewors.
To make them black the main ingredient is black Hawaiian sea salt.
