New member here, thanks for the add. I thought I would share todays adventure:

'Burnt Ends'
Country style ribs cut in 1.5 " bites, rubbed and smoked low with hickorky/maple for 5 hours. Sauced with Honey, brown sugar, guava butter and sweet baby rays and into oven at 160 for 2 hrs to thicken/set the sauce. 5-10 mins sear on grill over charcoal and hickory.
 
Nice job on the ends. Did any fall through the grates?

Never heard of making them out of country style ribs. How'd they turn out??
