* These should be made a day in advance or at least rest overnight in the refrigerator.
The flavor of these were great but I mad a few mistakes:
1) I used a lean meat when,I was at Sams Club I just grabbed a pack, checked the date and was on my merry way, I used a 90/10 and should have used an 80/20.
2) I believe I worked the meat too much when adding the ingredients .
3) when I smoked these on Frank , I made a 2 tier rack and placed some on the top tier and some on the bottom tier, the ones on top were in the direct path of the heat and were over smoked, overcooked and dried out, I had no choice but to throw them out. The ones on the lower rack were OK from a flavor standpoint, but the texture was not like I would have liked it.
So I learned a few things today especially about my smoker:
1) 90/10 is too lean
2) cook on the grate level ONLY!!
So you may ask yourself, "well if they were that bad how the hell do you know it's a good recipe", well the answer to that is because I made hamburgers with some of the
other meat and the hamburgers were excellent and YES they tasted like a McDonald's cheeseburger.
I will be trying these again but will use an 80/20 next time.
