Just trimmed my brisket, do I figure time based on original weight or new trimmed weight? I will be putting it in an electric smoker tonight. I watched a half dozen video how to' and trimmed off the hard bad fat to semi separate the flat and point and a few other places and carved about 2-3 pds off. The brisket was originally 13.75 pds now roughly11.5 - 12 pds so should I go by new weight or original weight when figuring out time? Thank you in advance and Happy Holidays
