Headed to NY in a week to muzzleload hunt for deer ,needed some jerky for snacks. I used my jerky slicer to get even strips of top round which was on sale for 2.49/lb
Quite a bit of trimming needed but the price was right.
Sliced up about 7 pounds and mixed a brine accordingly w/cure and spices
Smoked with hickory for two + hours at 140-150 and then moved to the dehydrator(I know I'm cheating
) for another 3 hours or so. Finished product came out very tasty!
