Homemade mayo

Anyone have a homemade mayo recipe they want to share? There a sub shop near me that makes your own and it's better then anything I've had before

We make clssic mayo: egg+ oil (and a little lemon and mustard). Are you interested in ingredients or how-to?

A recipe is a start but the Technique is more important. Check out Alton Brown's Mayo recipe on Foodnetwork. It works, is tasty and there are good videos on how it is done...JJ

Thanks chef jimmyJ I'll check it out. SmokinAl I'd agree with you till I had there mayo, it's just that good. If you are ever around clarion pa stop in at Bobs sub shop you won't be disappointed

We use a hand mixer (with two paddles). Start with a yolk (or two if more mayo is needed), a teaspoon of mustard, some lemon juice. When these are mixed add very little oil, splash by splash . When the oil is incorporated add more, increase the rate as you see the mayo taking shape. But don't poor freeely. Half littler of oil would take less than 5min.

If the oil separates you need to start from the beginning, then slowly add the failed mixture when you have some mayo formed.

This will give you a fluffy airy lighter mayo. For a fast denser mayo use an immersion blender. All ingredients in, move the blender up slowly.
