Finishing off a shank ham

Discussion in 'Pork' started by tbakko, Nov 21, 2010.

  1. How do you all finish off your hams? Do you finish thm on the smoker with a glaze or do you foil them & wrap them put in a cooler? This is my first ham, it is a 9 lb fully cooked picnin & I need some advice. ...Thanks in advance....Tom

You can glaze the ham and if you need to keep it hot then put it in the cooler.

Since it's a fully cooked ham which is cured there really is no need to let it rest.

Yea with a pre-cooked ham all you have to do is get it hot to maybe 140*ish.

When I do a ham I glaze it with a whiskey glaze with about 2hours left in cooking I glaze every 30 minutes.

I make homemade jellys and I have to say they make an outstanding glaze.

You might do a search, Disco about a year ago did a fruit & maple syrup glaze for a ham he made..... It was totally awesome!
