I generally start out with a shallow score in the fat areas, seasoned with cracked pepper... and then do a second smoke. Plan B is to slice into ham steaks and do a light smoke on those.

Here is how I prep the whole ham:

... at Sam's Club. Just in time for the Fall holidays. The ones I bought all had December sell-by dates. I smoked one for some friends to take on a hunting trip, then sliced another and gave it a light smoke.

That is the one I'll try. But with taters. I'm not a cooked cauliflower fan.

Me either by itself, in stuff like the chowder it's the thickener but no taste of it. I'd pick the Cuban casserole too between the two.
