Smoked a couple of chuck roasts today for some Beef Barbacoa Tacos!

Rubbed down a couple of chuck roasts with some Barbacoa spices and into the smoker at around 300 degrees for 3 hours. In a roaster, saluted some onion and garlic, added bay leaves, apple cider vinegar, chicken broth, taco seasoning and lime juice. Dropped the roasts in and into the oven for 3 hours. Fried up some corn tortillas and made tacos.

That pulled chuck looks great. Tacos do too, even if I don't have a clue what barbacoa is.

Thanks for all the likes, nice words and carousel. I have to give credit where credit is due... my wonderful wife came up with our Barbacoa recipe. It makes the best tacos paired with freshly fried taco shells.

Barbacoa is Mexican/Texas/Caribbean style of cooking beef or lamb over a pit or in a pit dug in the ground and then steamed or braised. I don't have a hole in my back yard so I use my smoker with hickory!

Here is the recipe:

[Rub]
3 to 4 lb Chuck Roast
2 tsp garlic powder
3 tsp ground cloves
2 tsp ground black pepper
1 tsp kosher salt
2 tsp oregano
4 tsp cumin
1 tsp ground jalapeño pepper
1 tsp cayenne pepper
1 tsp crushed red pepper
1 tsp chipotle chili pepper

[Roasting Liquid]
3 garlic cloves minced
1 onion diced
2 tbsp apple cider vinegar
3 bay leaves
1 cup chicken broth
3 tbsp lime juice
partial packet of taco seasoning (more/less depending on how spicy you like)

Combine all rub ingredients (Makes more Rub than you will use).
Apply rub to roast and let sit for an hour or overnight.
Smoke for 2-3 hours at 300°-350°.
Sauté onions until translucent and then add garlic and dry taco seasoning.
Let saute a bit more.
Add vinegar, bay leaves, chicken broth and lime juice to the sauté.
Bring to a boil.
Add smoked roast.
Add more water as necessary (liquid should be about halfway up side of roast)
Cover and roast in oven at 300° for @ 3 hours (until tender).
Remove beef from roaster and pull.
Add liquid from roaster as a finishing sauce to pulled Barbacoa.
