Well I know I have been away a while.

I did get to spend a long weekend on a river in Cherokee N.C. Drinking beer, smoking meat, and sippin some shine. If you haven't had a chance to go to the reservation, do so. Don't forget to stop by Gatlinburg and grab some shine. Go by Sugarlands and help "Tornado" support his 8 kids.... that he knows about.

Now I am Red ,White , and Blue Thru and Thu, and figured what better way to bring in labor day than Cuban sandwiches just like found in Miami.  We are a land of rich heritage ( healthy eaters ) diverse in our taste. Our thirst for icy beverages and a raging appetite for caveman style cooked meats on holidays unites us all. 

So aside from my rambling I wanted to share this experience which started with a poor cut of pork loin which did not pass standards of grading according to looks. Our local closeout distributor had a load of pork loins which were mis-cut or for other reasons did not pass the ridiculous grading system which causes us to discard large amounts of food annually which is perfectly fine for consumption. This 5 lb loin cost $7.50 U.S. 


I grilled this loin over direct coals, rotating all sides, then cooked indirectly until an IT of 150f. Yeah its a skinny one. I let it rest for an hour or so.


Ran it thru the meat slicer as thinly as it would slice.


I created my own MoJo sauce using a small can of chipoltles in adobo, garlic, cumin, lime juice, and local honey.

Now onto the sami.......

I had to use a ciabatta roll as Cuban rolls are impossible to find in the middle of a redneck town. I stacked some thinly sliced ham, pickle slices, sauteed onions, sliced pork loin, MoJo, and swiss cheese.


Brushed with melted butter and slightly grilled. Then I baked them in a 225F oven for 10 minutes.


Now I also added some Sweet Tater fries dusted with my Lays BB'Q clone.

Where did you find a recipe for the Lays BBQ Clone? Would you mind sharing it?
