MMMM I have not had time to do Jerky yet after our hunting season. This spring it's another on the list to do..... Did you make your own brine or use a recipie? Our kids love teriyaki honey blend we do. But good old salt and pepper is good too....

I used dirtsailors recipe for Thai jerky. Per pound of meat:

2 tbsp fish sauce
1 tbsp soy sauce(I used dark soy)
2 tsp sugar(I used light brown)
1/2 tsp white pepper

I also added slightly less than 3gm of a Instacure #1.

Tomorrow will be three hours of cherry smoke and then into the oven on dehydrate.
 
Yep definitely going to love that.... moose is our main meat animal for food at home. Soooo the wife doesn't let me get to much of that to play with. But this year was an exceptional season soooo. we'll see....
 
Yummmmm . Man I can't wait for this stint to be over.... I could be chewin on fresh made jerky...... Wouldn't hurt my feelings one bit.

I'm sure you could! I have one more shoulder roast and one sirloin tip roast left. I think the shoulder roast will go to jerky and the sirloin tip will become salami. Because of YOU, I have a pack of 50mm UMAi bags coming. My wife is "thrilled". Lol!

Thanks! I'm envious that you're able to harvest Moose every year. In Idaho, you're allowed one bull and one cow in your lifetime. And tags are done by lottery. I'm 0-2 so far.
