Tonight, I did something I very seldom do, I cooked for me!
My bride was determined to eat some sort of stuff that only animals eat, she called it salad, I'm still confused, but I carried on....
While she was murdering a head of lettuce and totally wrecking a tomato, I started digging in the freezer...
I found a vac pack of pulled pork and dropped it into a pot of cold water and set the pot on a burner set to high.
While the pulled pork sat in its make shift hot tub, I scrounged around the kitchen and found a few items that would make for a nice one pan meal... 1 large potato, a medium yellow onion, most of a pod of garlic, and a very wrinkled jalapeño!
All of these were sliced, diced, chopped, or minced and made ready for the skillet.
While I was digging in the freezer, I came across a very interesting package labeled "chicken lunch meat", I forgot about that experiment, but that's a story for later...
While I was chopping, slicing, and dicing, I had a 1/2 stick of Tillamook butter melting in a large skillet over medium heat. Once the knife work was done, I dropped the cubed potato into the butter.
I let the potatoes dance and sizzle a bit in the butter before I dumped in the chopped onion and slice jalapeño. The smell was almost immediately heavenly!
As the onions and jalapeño were beginning to sweat down, I mixed up a little Italian seasoning; basil, oregano, rosemary, thyme, and a touch of sage. 2 tablespoons of that were added to the adhock mix I has thus far!
Oh, the smell now was even making the cat's come to the kitchen! I allowed the mixture to meld a bit before I added the garlic and pulled pork since those 2 only needed to brown a bit and get hot!
All of that was cooking along well, but I thought I needed to kick it up a notch! I figured since I was only cooking for me, I could add some heat! Out came the sriracha sauce! I added a dab or 7 and stirred it in! I took a sniff and immediately wondered if I had any nose hair left! Almost perfect!
I knew exactly what was needed to finish this masterpiece off! A SMF friend recently sent me a bottle of Scott's BBQ Sauce, the Red Hot version! I poured up 2 Tablespoons and stirred it in to the already amazing smelling creation I had in work!
After stirring a bit, I once again inhaled deeply over the top of the skillet... I coughed a bit, my eyes watered, and my jaw clenched a bit... perfect!
I poured it all into a bowl, sat in my recliner in my cave with said bowl, opened a homebrew, and dined!
I'm fairly certain that I'll wake up around 1 or 2 AM cussing myself, but as of now, I'm loving what I made!
