One of these days I’ll stop disappearing for months on end!

Got a couple shoulders on today for some pulled pork my son’s birthday party is next weekend, we are hosting a pool party with a few of his close friends and their families to celebrate.

We’ll be serving pulled pork sandwiches and smash burgers. Making the pulled pork today and will reheat for Saturday, and smash burgers will be made day of on the Blackstone.

Got them on a few minutes ago.

Little update as we wind down. Cook went off without a hitch. Ran at 275, took just about 9.5 hours, I think.

Also had the Blackstone running for some carnitas tacos for dinner. Made for a hot corner!

Frying up the carnitas and opened the smoker for a check

All pulled, and some rub mixed in to taste. Final yield 9lb 14oz.

Epic opened and running smoothly so you got some breathing room?
5 hour wait time?
Nice cooks and Happy Birthday to your son.
Empty nest here so no big cooks these days.

Now that's a win with the PP and tacos!
Will be a great celebration!

Thanks Sir! Much appreciated.

Nailed it and man I'd murder a couple or three of those tacos
Hah hah thank you - I was making them for me, my wife, and father in law. I think I made four racks of six before everyone tapped out, plus the rack of basic bitch tacos for the kids.

Well it's open, smoothly I suppose is subjective :emoji_laughing:. Though I will say the work I was responsible for delivering is all wrapped up and has been running smoothly for several months. I've been out of there since early April. Have been involved in the project in one way or another since 2019, so a bit surreal to be just about done!
