Around here it is known as "(St. Louis) Bread Co", but I know they are all over the place now as "Panera". They send out free sandwich and other coupon e-mails a few times per year, and this is the one I get most often.

I cheated and bought the bread, as I had credit via one of those e-mails. If I had made it myself as I have before, it is a pretty simple loaf/pan bread with tomato paste and basil, with a cinnamon glaze on top.

My rough approximation for "Panera Signature Sauce" based on the ingredients:

2 part Mayo
1 part Chili Sauce and Ketchup (50/50)
1/2 part honey mustard
1/4part worcestershire
<1/8part tobasco, i used the asian sweet chili sauce one
and a tiny bit each of ginger and nutmeg

I believe they layer theirs: bread, sauce, turkey, bacon, cheese, lettuce, tomato, sauce, bread. I only had scraps left so I went with lettuce on bottom.

Thanks for the likes guys; I got hooked on them. The sauce worked so well with the maple-y bacon, and the turkey breast was pretty maple-y too from using ground fenugreek seed in the rub.
