So let's get you started. Pork Butts are a very forgiving meat. There are many ways to go about smoking them and everybody has their preferred way. A good stating point is the low and slow approach. Many smoke around 225°F. With a 9# bone-in butt its IT will approach 155-160°F somewhere in the 4.5-6 hour range. At this point you have a decision to make. Wrap or no wrap. As others have said, plenty of good info around here to inspire your approach. Regardless, it's about being patient and letting the meat do its thing until the IT is somewhere in the 200-205°F range. Depending on wrapping preference it could take 10-12 hours. Remember, butts are lousy at telling time, they are done when they want to be, i.e. each butt can be different. Last and very important step. It needs to rest and in my personal opinion, a minimum of 2 hours. We put it in a cooler with some towels on bottom and top.
