I thought i would brag in one place...instead of posting separately in fish , curing, poultry (already done on some).

Charcuterie boards

Smoked turkey legs terrine

Layered smoked trout/avocado mousse

Olive focaccia

Nduja

Blue cheese , pear , mixed greens salad for those who think there is way too much meat above

WOW!! What a New Years Eve spread. Looks fantastic (of course I had to Google nduja to find out what the hell it is--sounds good!).

What time's the party start. If I leave right now I'm pretty sure i can be there in time to eat.

I just gotta say POINTS for above and beyond.

Thank you for the compliments everyone. Hope you had a great party too.
Not pictured here were shredded cauliflower and cous-cous sides for the loin and a creamy, vinegar soured pork bones soup, served before guests left (3:30am) - good for hangover prevention.
Other than prosciutto and cake everything was home cooked/made (most charcuterie items were not cooked).
Everyone had a good time, no reports of food poisoning after >48h which is always a good thing.
Wishing everyone again a great 2017 with many achievements in the smoker, kitchen, life and health.
