I live on the WI border and shop at the Rockford Sam's Club. They always have whole untrimmed brisket there. I bought one there a couple of weeks ago. I don't remember seeing "choice" on the packaging, but it was a very good piece of meat. Probably was a "select" grading.
I cooked the flat and point separately on my
WSM. Flat foiled at 165-170 till it got to 195 and rested. The point got cubed for burnt ends (My first shot at that) I kinda overcooked them! (alcohol related mistake) The slices from the flat was excellent. I can't wait for the weather to cooperate a little better to do another one. No fun when it is in the single digits. Dave
