My 7yr nephew loves eating jerky. But I found out recently that he is allergic soy base food products which makes him sick.

Does anyone have a jerky marinating recipe that doesn't contain soy sauce. I need one for 5lbs of meat with cure#1. Any help is appreciated.
 
I dry rub most of mine. Just the cure, salt, pepper, garlic, and what ever other spices I want. No soy of any sorts.
 
I really was new at this and acessed it preformace before allowing it to smooth out a bit. But it got rave reviews from those I made it for.

Also I now tell everyone jerky is all about the consistent thickness of the meat cut at a 45 degree bias. Cross grain has no pull and with the grain required a dental premission slip to chew.

I know I'm late on this, but as my wife has soy intolerance, we've switched to Coconut aminos. Spendy stuff at $6.99 for an 8oz bottle but makes a great jerky marinade. WE use same in Chinese food I cook here at home too. Good stuff. :)
