Well, after many years of searching I think I've received the best review of my smoking endevors. My very soon to be 9 month old started clapping and then shaking uncontrollably out of excitement when I entered the house Sunday with a tray full of brisket. She devoured an almost unbelievable ammount of food for dinner with select sections of brisket without any spices.

Now she's not a picky eater by any stretch of the imagination, but she also doen't have that reaction to any meal. I'll probably never win a BBQ competition, but Sunday's reaction from little Victoria was probably better in my book!
 
WOW, I had the same reaction 2 weekends ago with smoked salmon. My 2 year old took a bite, looked up at the ceiling, clapped his hands, and said GOOD FISH DADDY!!!!!
He has always liked fish, but never acted that way.
He pointed to the smoker tonight, and said, Daddy, I want to cook meat now!!!
 
That's awesome! Got an 11-month-old that took a great liking to the last fatty I did. This weekend, he literally tackled the dog - who also happens to like the fatty - for bumping him out of line for the next bite offered!

Is so hard to get the great moments on camera! I get the camera out to catch something and he stops whatever he's doing to stare at the camera.
 
Going to give him a go at my first Canadian Bacon this weekend. Got it in the brine tonight, using your recipe Patty. Will have someone on the camera to catch the action!

Hope it turns out well for ya...remember to soak the salt out before smoking. lol....I hate to think of the look he'd make with a hunk of salty bacon in his mouth...

I agree about it being tough to get things on camera. You seem to get the neatest reaction to something you never anticipated and no reaction at all if you try to duplicate the moment. It's all great though!
 
Hey Irwin, I have the same judges (3). They get all crazy when we smoke and have to know everything about whats going in the smoker. They come around and ask if we can take a peek at the food, when will it be done and can we pull some for sampling. If the family is happy keep it smoking.
