Sticks are down to 26% weight loss as of tonight. They lost about 20% once they cooled down from smoking yesterday. Should be dry in about 5 days or so...

Did not need to take them down to 45% because I pre-dried the cheese....

I am curious about the reason for using beef fat instead of pork fat? Is this a dietary reason or due to flavor/texture/rancidity?

Thanks. Beef fat is for flavor. You could cetainly use pork fat.
