Cheese held up great!
 
Sticks are down to 26% weight loss as of tonight. They lost about 20% once they cooled down from smoking yesterday. Should be dry in about 5 days or so...
 
Well first of all those look amazing!
I am curious about the reason for using beef fat instead of pork fat? Is this a dietary reason or due to flavor/texture/rancidity?
