And that was piping hot straight out of the smokehouse for the slice for the pic.....drying the cheese in the fridge works great!
Sticks are down to 26% weight loss as of tonight. They lost about 20% once they cooled down from smoking yesterday. Should be dry in about 5 days or so...
Sticks are done today....40% weight loss.
Did not need to take them down to 45% because I pre-dried the cheese....

I am curious about the reason for using beef fat instead of pork fat? Is this a dietary reason or due to flavor/texture/rancidity?
