hi my name is Marty Payne and i am from new zealand,

                                                                                 Auckland NZ to be precise, i have been smoking fish for as long as i can remember. Smoking  everything from marlin and tuna to crayfish and mussels and have used some hard case smoke house's and smokers. I've heard a lot of recipes over the years for brine's and preparation  of fish before smoking so  I'm very interested in reading all of yours, your trials and tribulations  as anyone who smokes fish can tell especially in the early days there are some major fails experimenting with different fish types for the first time.

   i was excited to find this site we smoke a lot of fish down here in NZ and I'm always looking for different recipes and methods of smoking our fish so thanks for reading ,

You've come to the right place I smoke lots of salmon and have never had a flop I think it's because of my smoker but it just may be luck is on my side!!
